On Tuesday, July 8, 2025, the seminar of Lisa Nagai, Senior Assistant Professor in the Department of Faculty of Economics Department of Economics, Teikyo University, served the second TFT *2 menu of 2025, "Cold Chinese Noodles Made with Cherry Tomatoes from Izu Oshima," at Soratio Kitchen as part of a "joint project between the Tokyo Metropolitan Government and the University." *1?
The joint project "Local Industry Creation Project Utilizing Idle Greenhouses - Passing on Oshima's Resources to the Next Generation" in which Nagai's seminar is participating has been selected as a "Tokyo Metropolitan Government and University Joint Project" in 2025. The University of Electro-Communications is the representative of this joint project, and Tokyo University of Agriculture and Technology, Tokyo University of Foreign Studies, and Nagai's seminar are participating. By utilizing idle greenhouses and combining advanced cultivation and digital technologies, we aim to steadily produce fresh pepper, a high-value-added ingredient. In addition, we will promote the creation and branding of local industries by verifying a farming model at a shared farm and developing menus using agricultural products from Oshima.
Nagai's seminar has been working on developing menus that utilize local produce from Oshima, and this time they combined chilled Chinese noodles, made with Oshima cherry tomatoes, which are in season now, with TFT, a core activity of the seminar, and sold out 197 meals. Aya Kouchi (3rd year, Faculty of Economics), a student at our university who serves as the TFT leader, commented, "We had a hard time procuring ingredients and calculating costs, but selling out 197 meals gave us confidence. We want to continue working towards not just providing meals, but also revitalizing the Oshima region, supporting agriculture, and promoting its appeal. We were also able to raise awareness of TFT among more students and faculty members through the survey."
The Nagai seminar will continue to work on promoting joint projects.
